Has many of the same properties of a white cabbage, but can boast of a few subtle upgrades such as deep green leaves which are tender even when raw.

Drop into a pan of cooked bacon and braise with white wine. Add parsley, fennel seeds and cream.

Store in the fridge. Once cut, keep in airtight container away from other foods.
